Fancy Adult Mac n’ Cheese (with Quinoa and Spinach)

Quinoa Spinach Mac n' Cheese recipe

OK, kids will enjoy this too.

But seriously, who doesn’t like macaroni and cheese? Why not grow it up a little and make it more nutritious? Quinoa and spinach add not only nutrients but a unique flavor to this recipe.


  • 3 cups cooked quinoa
  • 3 tbsp of unsalted butter
  • 3 tbsp of all-purpose flour
  • 1 1/2 cups whole milk
  • A few dashes of freshly ground nutmeg
  • 1/4 tsp salt
  • 8 oz of shredded cheddar cheese
  • 1/2 cup freshly grated Parmesan cheese
  •  2 handfuls fresh baby spinach
  • 4 additional tsp of butter
  • 3/4 cup panko bread crumbs


  1. Add 3 tbsp of butter and 3 tbs of flour in a pan over medium heat
  2. Stir until a paste forms
  3. Add milk and continue stirring
  4. Turn up the heat to medium/high and bring to a boil while still stirring
  5. Add nutmeg, salt, and cheddar cheese- When the cheese sauce is smooth, remove it from the heat
  6. In a bowl, mix the quinoa, the cheese sauce, and the spinach
  7. Added grated Parmesan cheese
  8. Place in a glass casserole dish
  9. Mix the butter and breadcrumbs in a different bowl and then sprinkle on the casserole
  10. Bake at 350 for about 20 minutes
  11.  Enjoy like an adult 🙂
