Fancy Adult Mac n’ Cheese (with Quinoa and Spinach)
OK, kids will enjoy this too.
But seriously, who doesn’t like macaroni and cheese? Why not grow it up a little and make it more nutritious? Quinoa and spinach add not only nutrients but a unique flavor to this recipe.
Ingredients
- 3 cups cooked quinoa
- 3 tbsp of unsalted butter
- 3 tbsp of all-purpose flour
- 1 1/2 cups whole milk
- A few dashes of freshly ground nutmeg
- 1/4 tsp salt
- 8 oz of shredded cheddar cheese
- 1/2 cup freshly grated Parmesan cheese
- 2 handfuls fresh baby spinach
- 4 additional tsp of butter
- 3/4 cup panko bread crumbs
Instructions
- Add 3 tbsp of butter and 3 tbs of flour in a pan over medium heat
- Stir until a paste forms
- Add milk and continue stirring
- Turn up the heat to medium/high and bring to a boil while still stirring
- Add nutmeg, salt, and cheddar cheese- When the cheese sauce is smooth, remove it from the heat
- In a bowl, mix the quinoa, the cheese sauce, and the spinach
- Added grated Parmesan cheese
- Place in a glass casserole dish
- Mix the butter and breadcrumbs in a different bowl and then sprinkle on the casserole
- Bake at 350 for about 20 minutes
- Enjoy like an adult 🙂
