Pressure cooking has some advantages and disadvantages, depending on your needs. One of the disadvantages is that it can reduce the food’s nutritional value by up to 40%. This is because pressure cooking reduces food’s vitamins, proteins, minerals, and essential oils. 

It can also make you ill if you don’t follow proper safety precautions. For example, always start with cold water and keep a tight-fitting lid when pressure cooking. 

For foods with high acid content (e.g., tomatoes), release the pressure immediately after cooking, rather than allowing the natural release for 10 minutes or more.

Does Pressure Cooking Destroy Vitamins?

Many people are understandably concerned about whether pressure cooking destroys some of the vitamins in their food. However, studies have found that this is not the case. However, there is a minimal loss of nutrients in the food due to pressure cooking. 

For most foods, you would have to eat about three times as much as what you would eat for an everyday meal to feel any effects from any possible vitamin loss due to pressure cooking. So it should be fine if you are not overdoing it with your portions.
