Marciel E Presilla has written a number of cookbooks that are definitive guides to the cooking of the Latin American region. She has a doctorate in medieval Spanish history, is a culinary historian, an anthropologist and a chef and has won many awards and recognition for her work. She also runs two restaurants, Cucharamama and Zafra, in Hoboken, New Jersey.
